Mezze penne 400 g , 600 g of gray shrimp , 1 clove of unpeeled garlic , 1 teaspoon of saffron pistils, lemon zest to taste, 1 bunch of parsley, chopped pistachios to taste, olive oil , salt.

Bring to a boil a pot full of water duly salted , then tuffateci the pasta and bring to cooking.

Soak the saffron in a little warm water .

While pasta is cooking , heat a frying pan a generous round of extra virgin olive oil along with the stalks of parsley and a clove of garlic crushed .

Take the shrimp , shell them and remove the black gutted then chop very coarsely.

As soon as the oil begins to sizzle , add the shrimp to the pan well and sauté for a few seconds.

Please add at this point , with little saffron soaking water and cook on high heat.

Remove the stems of parsley and garlic from the pan.

Wet the shrimp sauce with a little water from the pasta rich in starch to make the sauce creamier .

Drain the pasta and transfer it to the pan with the sauce of shrimp , add a little chopped parsley and sauté for a few seconds.

Turn off the heat under the pan , spread the chopped parsley and grated over pasta in the lemon zest.

Serve the pasta completing the pareparazione with the chopped pistachios and grated lemon zest.
